LABC over here (and probably over there too) use the infos in the Approved Documents as deemed-to-satisfy. They're simple ways to comply with the requirements of the actual BRegs and other solutions will be accepted when suitably justified. They gain no additional funds from you choosing and justifying another route...

and if you're intending to have lots of longish showers, consider adding a drain heat exchanger (WWHR) to the mix.

sounds like air OK, and you'll probably need mains pressure to shift it...

be careful putting anything in too tight. SWMBO rammed the insulation a bit to tight against the rafter roll in places and it squeaks annoyingly in the wind...

it all depends on the loading... I had an SE draw up a scheme for the current abode to open up the trusses in part of the attic for "accessible storage" and it took a fair bit of sistering and lots of nails, bolts, and plywood flanges. But it gave me the extra "room" I needed to house stock and computer when young son needed a room of his own...

why not one Thermosense controller and configure a (say) 20c hysteresis?

Are you sure all stopcocks and isolators are fully open? Is there any chance the kitchen tap is straight off the mains before the accumulator?

XPS would do it too, I used some 10mm in our bathroom reveals just to get a wee bit more condensation protection.
