Ah, I read the left stairs as ending outside that door (not very clear and I hate all outward opening doors of any sort except fire doors). -

Well spotted, opening a door onto a landing is a really bad idea and may not pass building regs 🤷♂️ -
I don’t think insurance would cover the builder not following drawings and professionals instructions 🤷♂️

This is exactly what I did. Bedroom has no wardrobe just bed, bedside tables and dressing table (looks less cluttered) his and hers wardrobes (hers bigger than his 🤷♂️) either side of walkway to en-suite which had bath, toilet, basin and walk in shower. Worked very well for us. -
Like so many of us here. (Unlike @Pocster who has taken so long he has forgotten what he did 🤣).

And that is going to be at the cost of the builder subject to architect/SE recommendations. IMO

What evidence do you have of this original shed? At a previous house we had the same situation but no one complained when I put up a small shed. -

Not in my opinion, tell the builder it’s not right and to correct it. Why should you spend more money. Tell the builder this.

Not sure about Scotland but yes you can put a caravan in your garden it’s classed as a temp building, it does not even need wheels if it can be craned out and moved on a lorry. I know you are supposed to vent a disused chimney but wonder what harm would come if you blocked it off at the top and insulated it 🤷♂️ a cold loft has insulation on the bedroom ceilings, a warm roof has insulation up the back of the rood slope. It sounds like your eaves are “cold” (but will get hot from sun on the black slates.
