I have this between the kitchen area and lounge of a refurb we are doing. The kitchen is new extension and final floor will be self levelled. What the best to put here to pack it out before self levelling the floors ?

If that is earth you need to remove it first.  There should be foundation underneath.  You will need DPM under the concrete, linked to the dpm on the existing floors.

It was where the existing wall was before the extension went in

Dig it out. 

 

Find an offcut of insulation somewhere and bung it in. Mix a bucket of concrete and pour it level with the exiting floor. Vinyl will cover any cracking if it's a floating floor.
