It’s possible I may need someone to model my existing house, the proposed plans, and run through scenarios of what various levels of improvements would result?

 

I don’t want to stick 100mm EPS to the outside as a blanket if say 140mm would give me much better comfort for not much extra cost.

 

Are there any services people can recommended who help with this?

Many architects and independents offer this service. I chose to take the course, buy the software (excel spreadsheet really) and do it myself, seems to have worked out OK for us.

Airtightness and a quality MVHR system will be your biggest return on investment. 
 

Insulation plays second fiddle to these, as cold air infiltration (draughts) will promote ventilation heat loss vs fabric heat loss.
 

Fabric one is relatively simple to top up if you get airtight and keep the place from becoming excessively cold in the first place.
