Trusses going on to fresh mortar

Delay both.  Probably won't rain anyway.  Unless you have built using Weetabix, one week exposure should not hurt.

I've wondered about asking the brickies to fill in part of the doorway with blockwork to add temporary strength. They could throw up 9m2 of blockwork in a couple of hours.

But that won't cure in time either.  I suppose you could put some acrows under the lintels.

Yes, I've hired 6 acrows for the steel beams anyway as I thought that would be wise.

 

Could set it using a rapid set mortar but...

Get them all delivered on Tues and store the garage truss somewhere safe, sitting up against scaffolding tied in a few places. Without anything to lean them on your not going to be able to load the garage roof out which will give you a week or so to organise the crane to return and for everything to go rock hard. Don't let the brickie build them in one go either if it's not a rush. Build the blocks one day,prop them, go home and return and set the steel and finish it the next day.
