Brick slips

Hi first time poster.

I am about to install some Champagne coloured ? brick slips around a backsplash and sink and one small wall.

I have purchased the appropriate grout and adhesive.

However after not doing my homework I see the European method is to mount the slips on one another

without the grout.

Any thoughts on this.

Got any pictures? I haven't heard of this.

 Tolerance adjustment seems one very good reason for a grout gap.

I've not come across that. The closest would be Zellige ceramic tiles, which are close-butted but still grouted. Without grout they would soon become a cleaning problem.
