Ridge hip trays required?

Are ridge hip trays needed when using dry ridge system? 

What are the benefits of doing so ?

Yes.

They help hold the ridges level on profiled tiles mostly but can help with flats.

That and they are designed to take the water to the bottom of the hip.

Will they still vent the ridge ? All videos I see fixing dry ridge kits no one mentions these trays

Yes, dry hips should have trays fitted as per manufacturers instructions.

They will still allow ventilation.
