With and without think I like the mortar. But some may prefer without.?

Hi first time poster. I am about to install some Champagne coloured ? brick slips around a backsplash and sink and one small wall. I have purchased the appropriate grout and adhesive. However after not doing my homework I see the European method is to mount the slips on one another without the grout. Any thoughts on this. Thanks Jim.
